Organizational Innovation In Restaurants: Case Study Of Lean Implementation In Mk Restaurant

Abstract

Organizational innovation is implementing new concepts or behaviors in the organization to enhancing competitive advantage and business performance. This paper presents lean strategy, one of organizational innovation, which is used in restaurant business. Lean strategy focuses on value creation and waste reduction in operations. This paper also demonstrates one case example of implementing lean strategy in MK restaurant. Problems MK faced are stated. Then, major activities conducted by MK, which leads to successfully implement lean strategy, are highlighted.
